Flame-Licked Marinated Olives

These are wonderful to serve just as guests arrive for a meal. The olives cook very quickly over a high-heat fire, and the jumping flames are sure to impress the early arrivals. Be sure to have the cocktails mixed when the olives are put out—they have a less-than-subtle spiciness not at all conducive to patiently waiting for one’s beverage.

PROVIDES 4 TO 6 PORTIONS

1 cup mixed, pitted, unmarinated olives

2 tablespoons extra-virgin olive oil

Two 3-inch strips orange peel, white pith removed

2 small sprigs fresh rosemary

1 cinnamon stick

1 garlic clove, peeled and crushed

1 bay leaf

Pinch red pepper flakes

Metal skewers
